Tofu and Apple Spaghetti!

Here’s a simple (and quite sweet) lunch recipe, always VEGAN, straight from the Cortesi Recipe Journals!

All you need is:

Cooked spaghetti, plain tofu (grilled or stir fried) and fresh apple pieces (previously marinated in olive oil, garlic and honey {optional for very strict vegans} and herbs), Mediterranean tomato sauce (can contain mushrooms) and voila! Don’t forget to sprinkle with oregano and basil!
